This year Mother’s Day will be one-of-a-kind no matter how you celebrate. Many moms are taking on the role of a parent, professional, teacher, partner, entertainment director, coach, therapist, chef, housekeeper and referee. Some have toddlers. And some are living with early-released college students, while older mothers and grandmothers may be completely separated from their children. No matter the unique situation you’re in, one thing’s for sure. You’ve got to show Mom some love… and appreciation. She needs this now more than ever. 

Many moms will receive presents from their partners and children – traditional items like flowers, handmade crafts and chocolate. But if you really want to give Mom something meaningful, give her your time… and a break from the daily mom routine. We all know Mother’s Day wouldn’t be the same without an indulgent meal of some type, and this year is no exception. If you’re quarantined with mom, surprise her with breakfast in bed or let her take her chef hat off while you prepare a special Mother’s Day Brunch. If you’re physically separated or social distancing, you can still be together, apart, with food! Why not deliver brunch to her doorstep and enjoy the meal over a video chat?

Wondering what to prepare? We caught up with Chef Nick, the Executive Chef at, while he was making a few (2,500 to be exact) meals for furloughed hospitality workers in the kitchen of the Irving Convention Center. He graciously agreed to share his undeniably impressive, but secretly easy-to-make Salmon Frittata recipe with us.

I decided to give it a try before sharing and wow, just wow! It doesn’t require culinary school ability. It’s delish!  And it’s also a pretty easy clean up (since you’re on dish duty.) But hey, if cooking and cleaning is not your thing, plenty of Irving eateries are doing takeout Mother’s Day specials, and some are taking reservations if you can still get them. Whatever you do, one thing’s for sure, it will always be a Mother’s Day to remember!
