The Tavern Collective will open the Tavern on Meridian inside Irving's new Sandman Signature hotel.

The restaurant is owned and operated by Vancouver, Canada-based Northland Properties Corp., the parent company of multiple construction, entertainment and hospitality chains across the U.S., Canada, and the U.K. Dallas Stars owner Tom Gaglardi leads Northland as CEO.

Tavern on Meridian will boast a pub-like atmosphere and offer Detroit-style pizza, burgers and other global fare — including a poutine. So far, the restaurant only has two other locations in Canadian cities, Calgary and Winnipeg. The restaurant will open inside the recently opened Sandman Signature Las Colinas Hotel in Irving, which is also owned and operated by Northland.

The $18 million Sandman Signature hotel just opened in August after five years of construction. The 205-room luxury tower totals 110,000 square feet and includes a pool, gym and meeting spaces. The six-story hotel is part of the 36-acre Star Park mixed-use development by Blue Star Land, the firm of Dallas Cowboys owner Jerry Jones.
