Po’ Melvins’ New Year's Day Lucky Black-eyed Peas, jalapeno cornbread and cobbler

  • Eating black-eyed peas on New Year’s Day has been considered good luck for at least 1,500 years. Cornbread represents golden opportunities and pocket money (wealth). We’ve added cobbler just for good measure. Luck and money aside, this is darn good New Year’s Day eating. Mel’s famous peas recipe came for his daddy and won them “Best in Show” at the State Fair of Texas back in the day.

Po Melvin’s Lucky Black-eyed Peas
Ingredients:
1 lb. hickory smoked bacon, chopped
1 bunch green onions, finely chopped
6 small cans of fresh shelled black-eyed peas
3 cubes of beef bouillon
Water
2 tsp freshly ground black pepper
Worcestershire sauce, Tabasco and salt to taste (optional)

Directions:
Sauté the bacon until brown and crisp.   Add the green onions and sauté.
Add the black-eyed peas and 2 to 3 cans of water, along with bouillon cubes and pepper. Bring mixture to a boil, then lower the heat, cover and let simmer for 20 – 30 minutes, enough to allow some of the water to evaporate.
Taste and add salt if desired, and/or a dash of Worcestershire sauce or Tabasco.

Santa's workshop is closed for entries! This portion of the 12 Days of Christmas Contest is officially wrapped up. Thank you for spreading holiday cheer with us.
